TACO TUESDAY WITH A GREEK SPIN
Another quick weeknight meal, primarily thanks to Trader Joe’s and a little thought. This one was very little cooking as well, so it was nice and easy! I wanted to use the whole-wheat tortillas and didn’t feel like doing tofu and veggies which is a common go-to taco or burrito for us. I remembered we had the Tzatziki sauce and frozen falafels so figured why not a falafel taco.
Many find it weird, but I find chopping somewhat therapeutic so tonight’s dinner honestly helped lower my stress level not only because it was easy, but because what had to be done was mostly chopping accoutrements for the tacos!
Silly us, we forgot to take a picture of the actual taco itself but I think you get the idea. The hummus (yup- that’s Kirkland hummus in individual containers from Costco… and it is very tasty!) we ate on the side with some cucumbers and a couple of pita chips. The tortillas were heated on the electric stovetop then kept warm wrapped in foil in the low oven.
This is almost as easy as it comes and we probably could have even heated the falafels in the microwave (it said that was the preferred method but I wanted to make sure they weren’t soggy) instead of turning on the oven. It was no “Sunday Dinner”, but as far as weeknight dinners go, it was a nice change of pace. All you need is a couple ingredients and a little creativity!
