It is hot this week… not complaining at all, sooo much better than winter! Definitely ice cream weather. But, we try not to eat too much of that. So, the next best thing…. BANANAS! No, seriously, Banana “Ice Cream” is a real cool treat and it does closely mimic the real thing. I’m serious about that too. After trying this a couple times, I intend to have sliced frozen bananas in the freezer at all times. It can last a couple days in the freezer once made. But, its truest creamy flavor is about an hour or two in the freezer after you make it. If you are using it a couple days later you will want to defrost it for a while. It loses some of its creaminess though and is more like an ice or so, not so much of a banana ice cream. It’s still good, just not all that creamy.
We’ve tried it with berries and while it’s good, it just doesn’t get as creamy as with the bananas. However, if you want something different than just bananas, try a couple less bananas and add some other frozen fruits in their place.
Think blueberries, strawberries, raspberries, peaches, etc. Note- while it may sound hard to believe, the berries don’t always offer as much sweetness as you’d think. If you feel it needs a little more we prefer to add some quality jam, honey, or agave as opposed to sugar. We’ve also found that the chocolate chips taste better when you incorporate them when serving as opposed to freezing them with the banana ice cream ahead of time. Have fun with it! Play with the mix-ins… pretzels, nuts, peanut butter (you could hold back on adding almond butter to mixture itself or not- we won’t judge), gummy or other candies, etc.
