It is hot this week… not complaining at all, sooo much better than winter! Definitely ice cream weather. But, we try not to eat too much of that. So, the next best thing…. BANANAS! No, seriously, Banana “Ice Cream” is a real cool treat and it does closely mimic the real thing. I’m serious about that too. When it gets hot, whip out the food processor and cool down with this Banana Ice Cream. No ice cream maker required.
After trying this a couple times, I intend to have sliced frozen bananas in the freezer at all times. It can last a couple days in the freezer once made. But, its truest creamy flavor is about an hour or two in the freezer after you make it. If you are using it a couple days later you will want to defrost it for a while. It loses some of its creaminess though and is more like an ice or so, not so much of a banana ice cream. It’s still good, just not all that creamy.
This banana ice cream is simple to make and really does satisfy any ice cream cravings.

- 5 Very ripe bananas
- 1 teaspoon Vanilla
- tablespoon Almond butter
- 1/2 cup Unsweetened almond coconut milk
- 1 pinch Salt
- Chocolate chips

Instructions
- Slice the bananas and freeze in a freezer bag overnight.

- When ready to make, separate the banana slices up as much as possible and put in food processor. Pulse a few times to start the process.

- Add the almond butter and half of the milk. Continue to pulse. Add more milk as necessary to get an ice creamy consistency.
